These fried deviled eggs are made with simple ingredients with a delicious Southern twist (aka cheese straws)!

  • Hard boiled eggs - You'll slice them in half and remove the yolks to make the creamy yolk mixture. Save time by buying pre-cooked, peeled hard-boiled eggs from the store!
  • Mama Geraldine's Cheese Straws - Crushed into crumbs for a crispy, cheesy coating. These give the recipe its signature crunch and sharp cheddar flavor.
  • Flour - Helps the egg white halves hold onto the coating.
  • Egg - Whisked and used to help bind the coating.
  • Spray oil or neutral cooking oil - For a crisp air fryer finish.
  • Fixings for deviled filling - I use a classic filling mix of mayo, dijon mustard, pickles, salt, blacker pepper and a pinch of paprika, but feel free to use your go-to combo!

Substitutions & Variations

This recipe is easy to adapt based on what you have on hand or your dietary preferences:

  • Add heat with hot sauce, horseradish, chili powder, or cayenne to give the deviled yolk filling a spicy kick.
  • For a low carb option, swap all-purpose flour for almond flour or a gluten-free blend.
  • If you're dairy-free, use crushed dairy-free crackers or panko bread crumbs in place of cheese straws (though you'll lose the cheddar flavor).
  • For a Southern twist, mix in pickled jalapeños, pimento cheese, or hot sauce to amp up the bold flavor.
  • Lighten up the filling by using mashed avocado or Greek yogurt in place of some or all of the mayo.

How to Make Air Fryer Deviled Eggs

These crispy deviled eggs are easier to make than they look! Just follow these simple steps:

Step 1: Cut each hard-boiled egg in half lengthwise. Gently pop out the egg yolks and place them in a small bowl. Set the egg whites aside.

Step 2: Lightly coat each egg white half in flour. Then dip it into a beaten egg, and press into the crushed Mama Geraldine's cheese straws until fully coated.

Step 3: Place the coated egg halves facing down in a single layer in your air fryer basket. Spray lightly with oil and air fry at 375°F for 7-10 minutes, or until golden and crispy.

Step 4: While the egg whites cook, mash the yolks with mayonnaise, dijon mustard, pickle relish, and a little salt and pepper until smooth.

Step 5: Let the egg whites cool slightly, then spoon or pipe the egg yolk mixture back into each crispy half. Add a sprinkle of paprika if you like.

Storage

These are best fresh, but you can prep some parts in advance:

  • Storage: Store leftovers in a single layer in an airtight container in the fridge and enjoy within 24 hours. The crispy coating may soften slightly after refrigeration, but they'll still taste great.
  • Make ahead: You can make these ahead by prepping the yolk filling up to 24 hours in advance, crushing the cheese straws, and setting out your coating ingredients. Just wait to air fry and fill the eggs until right before serving to keep them crispy!

  • Want that perfect crispy outside with a creamy deviled egg center? These tips will help you nail it every time:
  • Start with cold, firm eggs. Chilled hard-boiled eggs are easier to slice cleanly and hold their shape better when coating and air frying.
  • Crush the cheese straws finely. For even coating and the best texture, pulse them in a food processor or crush in a zip-top bag with a rolling pin until you get fine crumbs.
  • Use a piping bag for a cleaner finish. A piping bag or a zip-top bag with the corner snipped off makes filling the eggs fast and mess-free-plus, it looks more polished for serving.
