Ingredients

This slow cooker chicken enchilada casserole comes together with simple, familiar ingredients that turn into a crowd-pleasing meal.

Overhead shot of ingredients for crockpot chicken enchilada casserole including chicken, enchilada sauce, beans, and tortillas.
  • Chicken breasts: Boneless, skinless chicken breasts turn tender and easy to shred after slow cooking. If you like a richer flavor, chicken thighs work great too.
  • Enchilada sauce: The heart of this dish. Choose red for a classic flavor or green for something a little brighter.
  • Diced tomatoes with green chiles: These add a touch of spice and tang. Fire-roasted tomatoes are another tasty option if you like a smoky note.
  • Black beans: They bring extra protein and fiber, keeping this recipe balanced and hearty. Drain and rinse before adding to the slow cooker!
  • Corn: Adds a little sweetness and color that pairs perfectly with the savory sauce. Fresh, frozen, or canned all work fine here.
  • Onion: A small diced onion gives great flavor as everything cooks down. If chopping's not your thing, grab a bag of frozen chopped onions to save time.
  • Mexican cheese blend: A mix of Monterey Jack and cheddar melts perfectly and gives you that cheesy finish everyone loves.
  • Corn tortillas: Cut into strips instead of layering them. It keeps the texture light and helps everything soak up the sauce.
  • Toppings (optional): Fresh cilantro, avocado, Greek yogurt, sour cream, or jalapeños. Set them out family-style and let everyone top their own bowl!

  • Shred store-bought rotisserie chicken and cut the cook time in half for an extra quick weeknight shortcut.
  • Stir in a scoop of cooked brown rice or quinoa at the end to stretch the meal and make it extra hearty.

Tips To Make the Best Slow Cooker Chicken Enchilada Casserole

Make this recipe even easier with a few kitchen tested tips.

  • Cut tortillas into strips rather than layering whole ones to keep the texture light and prevent clumping.
  • Don't skip draining and rinsing the beans and corn to keep the sauce from getting too thin.
  • Choose an enchilada sauce you love, since spice levels can vary from brand to brand. You can always use a milder sauce or cut back on the taco seasoning if you prefer a little less heat.
  • I love serving a few tortilla chips on the side. They're perfect for scooping and add a little crunch to each bite.

This crockpot chicken enchilada casserole stores well and tastes even better the next day as the flavors meld together.

  • Refrigerate: Store leftovers in an airtight container for up to 4 days.
  • Freeze: Cool completely, then transfer to a freezer-safe bag or container for up to 2 months. Thaw overnight in the fridge before reheating.
  • Reheat: Warm gently in the microwave or on the stovetop with a splash of extra enchilada sauce if needed.
