Easy Croissant S’mores (No Fire Needed!)

Nothing says summer quite like s'mores, but I do not always want to build a fire to make them happen. These croissant smores are my easy oven version, made with flaky bakery croissants, dark chocolate, and jumbo marshmallows for a dessert that feels nostalgic but takes almost no effort.

Warm croissant smores sit on a parchment-lined sheet pan with dark chocolate and marshmallows in the background.

I love a classic s'more, but sometimes the whole fire pit situation feels like a lot for a quick dessert.

They are gooey, buttery, and perfect for summer nights when you want something fun without setting up the fire pit. As a mom and dietitian, I love that these turn dessert into a little summer activity without needing a fire pit or a lot of cleanup!

If you love easy desserts, try my chocolate raspberry bites, fruit pizza cookie cups, or cherry chocolate yogurt clusters next.

Why You'll Love This Recipe

  • Easy no-fire dessert: These croissant s'mores use simple ingredients and bake in minutes, so you get classic s'mores flavor without needing a bonfire, campfire, or backyard fire pit.
  • Great for parties: These are fun for BBQs, pool days, picnics, birthday parties, and casual summer get-togethers.
  • Bakery shortcut: Using bakery croissants gives you a buttery, flaky base without making anything from scratch.
  • Kid-friendly treat: Kids can help fill the croissants, sprinkle toppings, and sneak a marshmallow or two, which honestly feels like part of the fun.

Ingredients for Smores Croissants

This recipe keeps the ingredient list short and sweet with just a few ingredients!

Bakery croissants, jumbo marshmallows, and dark chocolate are shown for croissant s'mores.
  • Bakery croissants: Large bakery croissants work best because they are sturdy enough to hold the chocolate and marshmallows without falling apart.
  • Jumbo marshmallows: Jumbo marshmallows give you that gooey s'mores center, and slicing them in half helps them fit inside the croissants.
  • Dark chocolate: Dark chocolate balances the sweetness from the marshmallows and buttery croissants, but milk chocolate works if you want a more classic flavor.
  • Graham cracker crumbs: Crushed graham crackers are optional, but they add that familiar s'mores flavor and a little crunch on top.

See the recipe card below for the full list of ingredients and measurements.

Substitutions & Variations

You can keep these croissant s'mores classic or make them a little extra!

  • Use milk chocolate in these croissant s'mores for a sweeter, more traditional campfire-style flavor.
  • Try mini croissants for party-friendly croissant s'mores that guests can grab from a dessert tray.
  • Spread chocolate hazelnut spread inside the croissants before adding marshmallows for an extra rich version.
  • Add peanut butter to these croissant s'mores for a sweet-salty chocolate peanut butter twist.
  • Tuck in fresh strawberries for a fruity layer if you want a chocolate-covered strawberry feel.
  • Drizzle caramel over the warm croissants  for a sweet bakery-style finish.
  • Sprinkle graham cracker crumbs over the top to bring in more classic s'mores flavor.
  • Swap in white chocolate for a sweeter variation that pairs well with strawberries, sprinkles, or crushed graham crackers.

How to Make Croissant S'mores

Once your croissants are sliced, the rest is as simple as fill, bake, and enjoy warm.

Step 1: Preheat the oven to 350°F and line a baking sheet with parchment paper.

A serrated knife slices a bakery croissant before filling it with chocolate and marshmallows.

Step 2: Use a serrated knife to slice each croissant in half horizontally, but do not cut all the way through if you want them to stay hinged.

Dark chocolate pieces are tucked inside a sliced bakery croissant for croissant s'mores.

Step 3: Place pieces of dark chocolate inside each croissant, spreading them out so every bite gets a little chocolate.

Jumbo marshmallows are added inside a bakery croissant with dark chocolate.

Step 4: Tuck the jumbo marshmallows inside the croissants with the chocolate. Optional: For a prettier finish, you can add half a jumbo marshmallow and an extra piece of chocolate on top of each croissant.

A hand adds dark chocolate to bakery croissants filled with marshmallows on a sheet pan.

Step 5: Place the filled croissants on the prepared baking sheet and bake for 8-10 minutes, or until the chocolate starts to melt and the marshmallows are soft.

Step 6: For a more toasted marshmallow top, broil the croissants for 30-60 seconds at the end. Make sure to watch closely so they don't burn!

Tips For Best Crescent Smores

A few small details help keep these croissant s'mores gooey, crisp, and easy to serve.

  • Cut with a serrated knife for clean croissant slices so you do not smash the flaky layers.
  • Avoid overstuffing the croissant s'mores because too much marshmallow can melt out before the chocolate softens.
  • Line the pan with parchment paper for easier cleanup if melted chocolate or marshmallow bubbles out.
  • Use a quick broil for toasted marshmallows if you want golden tops, but watch closely because they can burn fast.
  • Serve warm croissant s'mores right away while the chocolate stays melty and the croissant edges stay crisp.

Storage

These giant smores taste best fresh from the oven, but you can still save leftovers if needed.

  • Refrigerator: Store leftover croissant s'mores in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Reheat croissant s' mores in a 300°F oven or air fryer for a few minutes until warmed through.
  • Make ahead: Slice the croissants and prep the chocolate and marshmallows ahead of time, then assemble and bake right before serving.

FAQ

Can I use chocolate chips instead of a chocolate bar?

Yes! You can use chocolate chips, but a chopped chocolate bar melts more smoothly and gives you bigger pockets of chocolate inside the croissants.

Can I make croissant s'mores in the air fryer?

Absolutely, pop them in the air fryer at 325°F for about 3-5 minutes. Check them often because croissants and marshmallows can brown quickly!

What should I do if the marshmallow melts out?

If the marshmallow melts out, scoop it back toward the croissant while it is still warm and use a little less marshmallow next time.

Can I double this recipe for a crowd?

Yes, you can double or triple this recipe for a party, but use multiple baking sheets and leave space between the croissants so they warm evenly.
