Summer gardens mean one thing in the South: there is always more yellow squash than you know what to do with. This light squash casserole is my go-to way to turn that harvest into a cheesy classic Southern side dish that still feels balanced and veggie-forward. It's an easy win for weeknight dinners, family gatherings, or even as a colorful addition to a holiday table!

Freshly baked squash casserole in a white baking dish with a crisp topping and a yellow squash beside it.

As a registered dietitian, I love finding that sweet spot between comfort and nutrition. Yellow squash is naturally low in calories and provides vitamin C, potassium, and gut-friendly fiber. Pairing it with a little cheese adds satisfying flavor and protein, while the whole wheat cracker topping brings in some comfort and crunch.

This casserole is a great way to help both kids and adults enjoy more veggies without feeling like they're missing out on the good stuff.

Round out your sides table with my twice baked mashed potatoes, hot honey brussels or spicy mashed sweet potatoes!

Why You'll Love This Light Squash Casserole

  • Comfort food without the heaviness: This version keeps all the creamy, cheesy goodness you expect from a classic squash casserole, but uses lighter ingredients that still satisfy.
  • Perfect way to use fresh squash: If you've got a garden (or generous neighbors), this is the perfect recipe to put all that yellow squash to good use.
  • Quick and easy to prep: With just 15 minutes of hands-on time, it's weeknight friendly and great for meal prep, potlucks, or even holiday sides.
  • Veggie-forward and balanced: Each serving is packed with produce, a little protein, and whole grain crunch. Perfect for anyone trying to eat more veggies without sacrificing flavor.

Ingredients

This summer squash casserole uses everyday ingredients that come together to highlight the natural sweetness of yellow squash. It's simple, wholesome, and full of flavor!

Labeled overhead view of yellow squash casserole ingredients: squash, mozzarella, Parmesan, Ritz crackers, basil, garlic, olive oil, and seasonings.
  • Fresh yellow squash: Look for firm, bright squash with smooth skin. Smaller squash tend to be sweeter and less watery.
  • Shredded mozzarella: Melts perfectly and adds a creamy texture without being too heavy.
  • Parmesan cheese: Gives the casserole a salty, nutty bite. Freshly grated is worth it here!
  • Fresh basil: Brings freshness and a pop of color.
  • Whole wheat crackers: For a golden, crispy topping with extra fiber and flavor. I like using whole wheat Ritz crackers for a buttery cracker flavor!

See the recipe card below for the full list of ingredients and measurements.

Substitutions & Variations

This healthy squash casserole is easy to switch up based on your preferences or what's in your kitchen.

  • No yellow squash? Use zucchini or a mix of both for the same flavor.
  • Use bread crumbs, rolled oats, or even crushed cheese straws for a similar crunchy topping.
  • Swap in different types of cheese like Gruyère or cheddar cheese for a new flavor twist.
  • Swap in a plant-based shredded cheese and use nutritional yeast in place of Parmesan for that cheesy flavor that is dairy free.
  • Looking to add in more protein? Stir in shredded chicken or white beans for a more filling dish.
  • Mix in other seasonal favorites like diced tomatoes, corn kernels, caramelized onions, or chopped eggplant for more flavor, texture, and color. Just make sure to lightly sauté or roast them first to reduce moisture before adding to the casserole.
  • If you like spice, add a pinch of red pepper flakes or diced jalapeño to the squash mixture.
  • For a Southern twist, top with a little crumbled cooked turkey bacon for extra flavor and crunch.

Instructions

Follow these simple steps to bring this summer dinner casserole together with minimal prep.

Step 1: Preheat the oven to 375°F and lightly grease a 2-quart baking dish.

A mixing bowl filled with sliced yellow squash, crushed crackers, basil, salt, and pepper.

Step 2: In a large bowl, toss together the squash, minced garlic, half of the crushed crackers, chopped basil, salt, and pepper.

Unbaked yellow squash slices layered with basil and crumbs in a white baking dish, ready to go in the oven.

Step 3: Spread half of the squash mixture into the prepared baking dish. Sprinkle half of the mozzarella and Parmesan.

Step 4: Layer the remaining squash mixture on top and cover the dish with aluminum foil. Bake for 25 to 30 minutes, or until the squash is fork-tender.

Step 5: Increase the oven temperature to 400°F. Remove the foil and top the casserole with the remaining mozzarella, Parmesan, and crushed crackers.

Step 6: Return to the oven and bake uncovered for another 10 minutes, until the top is golden brown.

Step 7: Let the casserole rest for 5 minutes before serving.

Tips for the Best Yellow Squash Casserole

A few extra tips can make all the difference for a casserole that's flavorful, creamy, and never soggy.

  • Use a shallow casserole dish to help the topping crisp up rather than steam.
  • If able to, freshly grate the cheese. It melts better and brings more flavor than pre-shredded versions.
  • Don't skip the basil. It makes the whole dish feel brighter and fresher, especially when serving warm.
  • Add a broil finish (only 1-2 minutes at the end!!) for an extra crispy topping, but keep an eye on it.

Storage

This Southern Squash Casserole keeps well and is great for leftovers:

  • Refrigerate: Let it cool completely, then store in an airtight container in the fridge for up to 4 days.
  • Reheat: Warm individual servings in the oven or air fryer at 325°F for 8 to 10 minutes to help the topping stay crisp.
  • Not freezer-friendly: Because squash holds a lot of moisture, it can get soggy after thawing. It's best enjoyed fresh or refrigerated.

FAQ

Can I prep this ahead of time?

Yes, you can assemble it fully, cover, and refrigerate up to 24 hours before baking. Add 5 extra minutes to the bake time if cooking straight from the fridge.

How do you keep squash casserole from getting watery?

Slice the yellow summer squash thinly and evenly so it cooks through without releasing too much moisture. The whole wheat cracker crumbs help absorb excess liquid as it bakes, and finishing uncovered lets any extra moisture evaporate.

What can I serve with squash casserole?

This dish pairs well with grilled chicken, pork chops, baked fish, or a simple green salad for a light and balanced meal. It also makes a great side for summer cookouts or holiday spreads.

I tried this yesterday. The only whole whole wheat crackers I could find at the grocery store was whole wheat wheat thins. Not sure which ones I should have used, but casserole turned out great! My husband and I and our company absolutely loved it. No left overs to be had later. The flavor was great and my company wanted the recipe. I will be making this again and will be taking this to our next church potluck. If you haven't tried this yet, I'm sure you will love it. It's a keeper for me.

This makes my day! So glad the crackers worked out and everyone enjoyed it. I like using the Ritz whole wheat crackers. No leftovers is always a good sign... hope it’s just as popular at your church potluck!
