Apple Pulled Pork

This apple pulled pork is juicy, tender, and full of sweet and smoky flavor. Made with just a handful of simple ingredients, it's perfect for meal prep, game day, or an easy weeknight dinner.

Ingredients
  

  • 4 lb boneless pork loin
  • 2 tablespoons BBQ dry rub
  • ¾ cup apple juice
  • 2 tablespoons apple cider vinegar
  • cups BBQ sauce store-bought or homemade

Instructions
 

  • Pat the pork dry with paper towels and place it in the slow cooker.
  • Rub the BBQ seasoning all over the pork, coating it well on all sides.
  • Pour in the apple juice, apple cider vinegar, and BBQ sauce, making sure the liquid surrounds the pork (not poured directly on top).
  • Cover and cook on low for 6-8 hours, until the pork is fork-tender and easy to shred.
  • Shred the pork directly in the slow cooker using two forks, or remove it to a cutting board to shred, then return it to the sauce.
  • You can remove some of the liquid and reduce it on the stovetop for a thicker sauce, or simply add more BBQ sauce to serve, depending on how saucy you like it.

Notes

  • Use pork shoulder instead of pork loin if you want a richer, more traditional texture.
  • To make it extra saucy, stir in an extra ½ cup of BBQ sauce after shredding.
  • Leftovers freeze well and are great for meal prep, sandwiches, or BBQ bowls.
