Ingredients
  

Quick slaw

  • ¼ cup greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • ½ tablespoon honey
  • 16 oz tri-color coleslaw mix
  • Salt and pepper to taste

For the bowls

  • 2 lbs pulled pork cooked
  • 20 oz frozen sweet potato fries
  • 1 cup BBQ sauce plus more to taste
  • ½ cup pickled onions
  • pickles

Instructions
 

  • In a medium bowl, whisk the Greek yogurt, mayonnaise, apple cider vinegar, Dijon, honey, salt, and pepper until smooth. Toss with the coleslaw mix until coated and set aside.
  • Bake or air fry the sweet potato fries according to package directions until deep golden and crisp, about 10 to 15 minutes.
  • While the fries cook, warm the pulled pork in a skillet over low heat, then stir in the BBQ sauce to taste.
  • To assemble, divide the fries among four bowls, top with the saucy pork, add a generous scoop of slaw, and finish with pickled red onions and dill pickles. Drizzle with a little extra BBQ sauce if you like.

Notes

  • Feel free to use any fry variety you like, from waffle or crinkle-cut to seasoned wedges or shoestring.
  • Use leftover pulled pork or grab some from takeout to make this even easier.
  • If you have leftovers, store components separately and re-crisp fries right before serving for the best texture.
