BBQ Sheet Pan Chicken

This BBQ sheet pan chicken is bold, flavorful, and incredibly easy. With juicy BBQ-glazed chicken, crispy ranch potatoes, and roasted broccoli all on one pan, dinner doesn’t get much simpler.

Ingredients
  

  • 1 ½ pounds golden petite potatoes
  • 2 tablespoons olive oil divided
  • 1 tablespoon ranch seasoning
  • 1 ½ pounds boneless, skinless chicken breasts
  • 2 tablespoon BBQ dry rub seasoning
  • 4 cups fresh broccoli florets
  • Salt and pepper to taste
  • ¼ cup BBQ sauce

Instructions
 

  • Preheat oven to 425°F. Line a large sheet pan with parchment paper or lightly spray with cooking spray.
  • On the sheet pan, toss potatoes with olive oil and ranch seasoning. Spread them out evenly and roast for 15 minutes.
  • While the potatoes are roasting, rub the chicken breasts with the BBQ dry rub seasoning.
  • After 15 minutes, remove the sheet pan from the oven. Push the potatoes to one side of the sheet pan.
  • Add the broccoli to the pan, drizzle with a little olive oil, and season with salt and pepper. Gently toss to coat, then push it to the opposite side of the pan.
  • Place the seasoned chicken breasts in the center of the sheet pan between the veggies. Return the pan to the oven and roast for another 15 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are golden and tender.
  • In the last few minutes of roasting, brush the BBQ sauce over the chicken breasts and allow it to caramelize.

Notes

  • Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the oven or air fryer at 375°F until warmed through and slightly crisp.
  • No fresh broccoli? You can use frozen florets straight from the freezer. Just pat dry to remove excess ice for better roasting.
  • Switch up the flavors by using different BBQ sauces like honey BBQ, mustard-based, or chipotle. You can also swap the dry rub for Cajun seasoning, taco seasoning, or your favorite spice blend.
