Ingredients

Burgers

  • 1 lb. ground chicken
  • 1 large egg scrambled
  • ¼ cup italian breadcrumbs
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 4 provolone cheese slices for serving
  • 4 hamburger buns for serving
  • 4 balsamic glaze for serving (optional)

Bruschetta

  • 5 roma tomatoes chopped
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon garlic minced
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon salt
  • ¼ cup fresh basil sliced into ribbons
  • freshly ground black pepper

Instructions

  • In a medium bowl, combine the ground chicken, egg, breadcrumbs, dried basil, garlic powder, salt, and pepper. Mix until just combined, being careful not to overmix.
  • Shape the mixture into 4 patties and place them in a single layer on the air fryer rack or basket.
  • Preheat the air fryer to 375°F, then cook the chicken patties for 10 to 12 minutes, flipping halfway, until the internal temperature reaches 165°F.
  • While the patties cook, prepare the bruschetta topping by combining all the bruschetta ingredients in a bowl and stirring well. Set aside.
  • During the last minute of cooking, place a slice of provolone on each patty and close the air fryer to melt the cheese.
  • Serve the patties on buns, topped with a generous scoop of bruschetta, and drizzle with balsamic glaze if desired.

Notes

  • Store cooked patties in an airtight container in the fridge for up to 3 days, keeping the buns, bruschetta topping, and glaze separate until ready to assemble.
  • Reheat patties in the air fryer at 350°F until warmed through, or freeze uncooked patties for up to 2 months with parchment between them.
  • For a lighter option, skip the bun and serve the burgers in crisp lettuce cups with the bruschetta topping and balsamic glaze.
  • Grill directions: Heat your grill to medium. Cook the patties for about 5 to 6 minutes on each side, until they reach 165°F. Add the cheese during the last minute so it melts.
  • Oven directions: Heat your oven to 400°F. Place the patties on a lined baking sheet and bake for 18 to 20 minutes, flipping halfway, until they reach 165°F. Add the cheese in the last minute or two.
