These chicken smash tacos pack buffalo heat and a fast, skillet-fried crunch. Finish with ranch, lettuce, and tomato for a fresh, balanced bite.

Ingredients
  

  • 1 lb ground chicken about 93% lean
  • 1 tablespoon ranch seasoning
  • 2 tablespoon buffalo wing sauce plus more for serving
  • 8 small flour tortillas 6-inch
  • 1-2 tbsp olive oil
  • 2 cups shredded romaine
  • 1 cup diced tomatoes
  • cup bleu cheese crumbles
  • cup ranch dressing

Instructions
 

  • In a medium bowl, gently mix the ground chicken with ranch seasoning and buffalo sauce.
  • Spread about 2 tablespoons of the chicken mixture onto one side of each 6-inch tortilla, pressing it in a thin, even layer from edge to edge.
  • Heat a nonstick or cast-iron skillet over medium to medium-high and add a light coat of oil.
  • Place the tortillas in the skillet meat-side down and cook 2 to 4 minutes, until the chicken is browned and releases easily.
  • Flip so the tortilla side hits the pan and cook 1 to 2 minutes more, until the tortilla is golden and the chicken reaches 165°F.
  • Top with lettuce, tomato, bleu cheese, and a ranch drizzle. Add extra buffalo sauce if you like it saucy.

Notes

  • Make sure to spread the chicken nice and thin, edge to edge, so it sears fast and flips clean.
  • Store cooked chicken-tortilla bases in an airtight container for up to 2 days. Store lettuce, tomato, and sauces separately.
  • Re-crisp bases in a dry skillet over medium heat for 2 to 3 minutes per side, then add fresh toppings.
