Ingredients
  

  • 1 package refrigerated cheese tortellini 9 oz
  • ¼ cup pesto
  • 1 cup cherry tomatoes
  • Fresh basil leaves about 20 small or torn larger leaves
  • 1 cup mini mozzarella balls drained
  • Balsamic glaze for serving (optional)

Instructions
 

  • Cook tortellini according to package instructions. Drain, rinse with cold water, then toss with pesto until evenly coated.
  • On each skewer, thread 1 cherry tomato, 1 basil leaf, 1 pesto-tossed tortellini, and 2 mozzarella balls.
  • Repeat until all ingredients are used.
  • Arrange on a serving platter and serve with balsamic glaze on the side for optional drizzling.

Notes

  • If making ahead, assemble the skewers and store in an airtight container for up to 3 days.
  • For the best texture, cook the tortellini just until tender and avoid overcooking. Rinsing it under cold water after draining helps stop the cooking process and keeps it from getting too soft.
  • You can swap in gluten-free tortellini or add extras like salami or prosciutto for fun variations!
