Cookie base ½ cup butter ½ cup granulated sugar 2 tablespoon brown sugar 1 egg 1 egg yolk ¼ teaspoon almond extract 2 teaspoon vanilla extract ½ teaspoon baking powder 1 cup all purpose flour 3 tablespoon cornstarch ¼ teaspoon salt Frosting 4 tablespoon unsalted butter softened 1 teaspoon vanilla extract 3 tablespoon heavy cream 1 cup powdered sugar Christmas sprinkles
Cookie Layer Preheat your oven to 350°F. Line an 8x8 inch baking pan with parchment paper so the bars lift out easily.
In a large bowl, use a hand mixer or stand mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the egg, vanilla extract, and almond extract. Mix until smooth.
Add the flour, cornstarch, baking powder, and salt. Stir until a soft dough forms.
Press the dough evenly into the prepared pan. Bake for 20 to 25 minutes or until the edges are lightly golden. Let the bars cool completely.
Frosting & Decoration In a medium bowl, beat the powdered sugar, softened butter, vanilla extract, and heavy cream until fluffy.
Spread the frosting over the cooled cookie base using an offset spatula.
Add sprinkles while the frosting is still soft. Slice into squares and enjoy.
