Ingredients

For the crispy coating:

  • 6 hard-boiled eggs cold
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • ½ package Mama Geraldine’s cheese straws crushed into fine crumbs

For the filling:

  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon pickle relish
  • Salt and pepper to taste
  • Smoked paprika for garnish

Instructions

  • Cut each hard-boiled egg in half lengthwise. Gently pop out the egg yolks and place them in a small bowl. Set the egg whites aside.
  • Lightly coat each egg white half in flour. Then dip it into a beaten egg, and press into the crushed Mama Geraldine’s cheese straws until fully coated.
  • Place the coated egg halves facing down in a single layer in your air fryer basket. Spray lightly with oil and air fry at 375°F for 7–10 minutes, or until golden and crispy.
  • While the egg whites cook, mash the yolks with mayonnaise, dijon mustard, pickle relish, and a little salt and pepper until smooth.
  • Let the egg whites cool slightly, then spoon or pipe the egg yolk mixture back into each crispy half. Add a sprinkle of paprika if you like.
