3tablespoonsmayonnaise
1teaspoonDijon mustard
1teaspoonpickle relish
Salt and pepperto taste
Smoked paprikafor garnish
Instructions
Cut each hard-boiled egg in half lengthwise. Gently pop out the egg yolks and place them in a small bowl. Set the egg whites aside.
Lightly coat each egg white half in flour. Then dip it into a beaten egg, and press into the crushed Mama Geraldine’s cheese straws until fully coated.
Place the coated egg halves facing down in a single layer in your air fryer basket. Spray lightly with oil and air fry at 375°F for 7–10 minutes, or until golden and crispy.
While the egg whites cook, mash the yolks with mayonnaise, dijon mustard, pickle relish, and a little salt and pepper until smooth.
Let the egg whites cool slightly, then spoon or pipe the egg yolk mixture back into each crispy half. Add a sprinkle of paprika if you like.
