One-pot Dutch oven chili you can make with ground beef or turkey, thick and flavorful for busy weeknights. Set out a toppings bar and add warm cornbread for the ultimate comfort food!

Ingredients
  

  • 2 teaspoon olive oil
  • 1 large yellow onion chopped
  • 1 medium bell pepper any color, chopped
  • 1 lb lean ground beef or turkey
  • 1 tablespoon tomato paste
  • 2 teaspoon minced garlic
  • 3 tablespoon chili seasoning
  • 1 14.5-ounce can diced tomatoes can also use crushed tomatoes
  • 1 cup chicken broth
  • 1 15 oz can dark red kidney beans rinsed and drained
  • salt and pepper to taste
  • For topping: cheese, avocado, tortilla chips, cilantro, sour cream

Instructions
 

  • Heat your Dutch oven over medium heat with a drizzle of olive oil. Add the onion and bell pepper and cook, stirring often, until slightly softened, about 5–7 minutes.
  • Add the ground beef or turkey and cook, breaking it up with a spoon, until no longer pink, 4–6 minutes. Drain excess fat if needed.
  • Stir in the tomato paste, garlic, and chili seasoning and cook until fragrant and slightly darkened, 1–2 minutes.
  • Add the diced tomatoes, broth, and kidney beans. Bring to a boil, then reduce heat to a gentle simmer and cook covered, stirring occasionally, for about 30 minutes until thickened. Add a splash of broth if it gets too thick.
  • Taste and season with salt to preference. Ladle into bowls and finish with toppings like sour cream, sliced jalapeños, shredded cheese, scallions, or crushed corn chips.

Notes

  • Adjust thickness by simmering uncovered to reduce or adding warm broth a little at a time to loosen.
  • Storage: Cool for 20–30 minutes, pack into shallow airtight containers, refrigerate up to 4 days or freeze up to 3 months, and reheat gently with a splash of broth until steaming.
