Ingredients
  

  • ½ cup unsalted butter melted
  • ¾ cup light brown sugar packed
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • ¾ cup mini Cadbury eggs chopped
  • Optional: extra chopped Cadbury eggs for topping

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8x8 baking pan with parchment paper to easily lift bars out and avoid sticking.
  • In a large bowl, whisk together the melted butter and brown sugar until fully combined and slightly glossy.
  • Mix in egg, egg yolk, and vanilla extract until smooth.
  • Stir in baking powder, salt, and flour until just combined. Avoid overmixing for soft, chewy bars.
  • Gently fold in the chopped mini Cadbury eggs.
  • Spread the batter evenly into the prepared pan and smooth the top with a spatula. If you’d like, sprinkle a few extra chopped Cadbury eggs over the top.
  • Bake for 20-25 minutes until the top turns a golden color and a toothpick inserted in the center comes out clean. Avoid overbaking to maintain chewiness.
  • Let the bars cool completely in the pan before slicing and serving.
