Easy Coca-Cola Pulled Pork Recipe

This pulled pork with Coke is an easy slow cooker BBQ recipe made with pork shoulder, Coca-Cola, and smoky dry rub seasoning. It is tender, flavorful, and perfect for summer parties, sandwiches, nachos, baked potatoes, and Southern BBQ plates.

4 lbs boneless pork shoulder or pork butt 2 tablespoons BBQ dry rub seasoning 1 can Coke 12 oz 1 ½ cups BBQ sauce optional Buns, slaw, pickles, or sides for serving
Pat the pork shoulder dry with paper towels, then coat it on all sides with BBQ dry rub seasoning.
Place the seasoned pork shoulder in the crockpot and pour the Coke around the meat instead of directly over the top.
Cover and cook on low for about 8 hours, or until the pork is very tender and shreds easily with two forks.
Carefully transfer the pork to a cutting board or large bowl, then remove any large pieces of fat. Shred the pork with two forks.
Discard most of the cooking liquid from the slow cooker and add the shredded pork back to the slow cooker. Stir in BBQ sauce, if using.
Keep warm until ready to serve, then enjoy on sandwiches, loaded baked potatoes, nachos, rice bowls, or BBQ plates.
If the pork does not shred easily, keep cooking it until it becomes fork-tender!!
Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
For parties, keep the pulled pork warm in the slow cooker and stir occasionally before serving.
Optional: For crispy pork pieces, spread the shredded pork on a baking sheet and broil for 2 to 4 minutes, watching closely so it does not burn.
