Wash the strawberries and pat them completely dry with paper towels.
Slice each strawberry in half lengthwise through the stem.
Use a small spoon or melon baller to gently scoop a small well into the center of each strawberry half.
Slice a tiny piece off the rounded bottom of each strawberry half if needed so they sit flat on the serving platter.
In a medium bowl, beat the softened Neufchâtel cheese, Greek yogurt, and powdered sugar until smooth.
Spoon the cheesecake filling into a piping bag or zip-top bag.
Pipe the filling into each strawberry half.
Top each deviled strawberry with blueberries and enjoy!
Notes
Make sure the strawberries are very dry before filling so the cheesecake mixture stays in place.
If the filling feels too soft, chill it for 15 to 20 minutes before piping.
For the best texture, assemble these deviled strawberries the same day you plan to serve them.
Store assembled deviled strawberries in an airtight container in the refrigerator for up to 24 hours. For best results, prep the filling ahead and assemble the strawberries closer to serving.
