Ingredients

  • 1 lb pork tenderloin cut into 1 to 1.5 inch chunks
  • 1 tablespoon olive oil
  • 2 tablespoon BBQ rub seasoning
  • ¼ cup BBQ sauce

Instructions

  • Preheat your air fryer to 400°F.
  • In a medium bowl, add the pork to a bowl and toss with olive oil and bbq seasoning until well coated.
  • Place the seasoned pork bites in a single layer in the air fryer tray.
  • Cook for 10 to 15 minutes, flipping halfway through, until edges are browned and the pork reaches 145°F internally.
  • Brush the bites with BBQ sauce and cook 1 to 2 minutes more to set the bbq sauce.
  • Rest for 2 minutes and serve warm.

Notes

  • Trim any silver skin for the best texture.
  • These make great meal prep proteins for rice bowls, salads, potatoes, or simple veggie sides.
  • For storage, keep leftovers in an airtight container up to 3 days and reheat in the air fryer at 350°F for 3 to 4 minutes so the pork stays tender and doesn’t dry out.
