Fresh Strawberry Poppyseed Dressing

This strawberry poppyseed dressing is fresh, sweet, tangy, and perfect for summer salads! It blends up in just a few minutes with fresh strawberries and a few pantry staples.

Ingredients
  

  • 2 cups fresh strawberries hulled
  • ¼ cup white wine vinegar
  • ¼ cup olive oil
  • 2 tablespoons honey plus more to taste
  • 1 tablespoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon poppy seeds

Instructions
 

  • Add the strawberries, white wine vinegar, olive oil, honey, Dijon mustard, salt, and black pepper to a blender or small food processor.
  • Blend until the dressing is smooth and creamy. Taste and adjust with extra honey for sweetness, vinegar for tang, or salt and pepper to bring out the flavor.
  • Strain the dressing into a jar or small bowl to make it extra smooth, then stir in the poppy seeds.
  • Serve right away or refrigerate until ready to use. Shake or stir well before serving.

Notes

  • Use ripe, sweet strawberries for the best flavor. If your strawberries taste a little tart, add an extra drizzle of honey to balance the dressing.
  • If the dressing is too thick, add a small splash of water or vinegar until it reaches your preferred consistency.
  • Store leftovers in an airtight jar in the refrigerator for up to 4 to 5 days. Shake well before serving.
