Frozen Chocolate Covered Yogurt Bites Recipe

These frozen chocolate yogurt bites are made with Greek yogurt, honey, vanilla, fresh cherries, and dark chocolate for an easy summer freezer treat.

Ingredients
  

  • 1 ½ cup fresh cherries pitted and finely chopped
  • 1 cup plain Greek yogurt
  • ¼ cup honey or more to taste
  • 1 teaspoon vanilla extract
  • 2 cups dark chocolate chips or chopped dark chocolate
  • 2 tablespoons coconut oil
  • Flaky sea salt optional for topping

Instructions
 

  • Line a baking sheet or plate with parchment paper so the yogurt bites don’t stick once frozen.
  • Wash, dry, pit, and finely chop the fresh cherries. If the cherries seem extra juicy, gently pat them dry with a paper towel before mixing.
  • In a medium bowl, stir together the Greek yogurt, honey, vanilla extract, and chopped cherries until everything is evenly combined.
  • Scoop about 3 tablespoons of cherry yogurt mixture onto the prepared baking sheet, leaving a little space between each bite. You should be able to make 6 bites.
  • Freeze the yogurt bites for at least 2 hours, or until they are completely firm and solid.
  • Add the dark chocolate and coconut oil to a microwave-safe bowl, then microwave in 30-second intervals, stirring between each interval, until smooth.
  • Working quickly, dip each frozen yogurt bite into the melted chocolate, letting the excess chocolate drip off before placing it back on the parchment paper.
  • Sprinkle with flaky salt, if desired before the chocolate sets.
  • Return the chocolate covered yogurt bites to the freezer for 10 to 15 minutes, or until the chocolate shell is firm.
  • Let the bites sit at room temperature for 2 to 5 minutes before eating so the center softens slightly and tastes creamy instead of rock hard.

Notes

  • Use thick Greek yogurt for the creamiest frozen texture. Thinner yogurts can make the bites icier and harder to scoop.
  • Work in batches when dipping the bites. Keep some in the freezer while you dip the others so they stay firm.
  • Store leftovers in a freezer-safe container with parchment paper between layers for up to 2 months.
