Scoop about 3 tablespoons of cherry yogurt mixture onto the prepared baking sheet, leaving a little space between each bite. You should be able to make 6 bites.
Freeze the yogurt bites for at least 2 hours, or until they are completely firm and solid.
Add the dark chocolate and coconut oil to a microwave-safe bowl, then microwave in 30-second intervals, stirring between each interval, until smooth.
Working quickly, dip each frozen yogurt bite into the melted chocolate, letting the excess chocolate drip off before placing it back on the parchment paper.
Sprinkle with flaky salt, if desired before the chocolate sets.
Return the chocolate covered yogurt bites to the freezer for 10 to 15 minutes, or until the chocolate shell is firm.
Let the bites sit at room temperature for 2 to 5 minutes before eating so the center softens slightly and tastes creamy instead of rock hard.
