Ingredients
  

  • ¼ cup coconut oil melted
  • ¼ cup almond butter
  • 1 teaspoon vanilla extract
  • ¼ cup honey
  • 3 cups old fashioned oatmeal
  • cup dark chocolate bar coarsely chopped
  • Flakey sea salt to garnish

Instructions
 

  • Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, whisk melted coconut oil, almond butter, vanilla extract, and honey until smooth. Add rolled oats and stir until every flake is evenly coated.
  • Pour onto the lined sheet, spread into an even layer, and press firmly to encourage big clusters.
  • Bake for 15 minutes, then give it a quick stir. Bake 5 more minutes, keeping an eye on it, until fragrant and lightly golden.
  • Remove from the oven and let the granola rest for 10 minutes before adding the chocolate. Once the 10 minutes is up, add the chopped chocolate evenly over the granola. Add a light sprinkle of flaky sea salt, if desired.
  • Let granola cool 1–2 hours until the chocolate hardens, or pop the pan in the freezer to speed it up. Break into large clusters and store in an airtight container at room temperature for up to 2 weeks.

Notes

  • Make sure to let the granola cool for at least 10 minutes before adding the chocolate chunks!
  • Add additional mix-ins such as coconut flakes, chopped nuts, or dried fruit to make it yours. Try to keep total add-ins around 1 to 1¼ cups so the clusters hold.
  • Storage: Keep in an airtight jar at room temperature for 2–3 weeks, or freeze flat for up to 6 months; thaw sealed at room temp, and re-crisp at 300°F for 5–8 minutes if needed.
