Start your morning off right with these creamy, protein-packed ham and cheese egg bites! They’re quick to prep, easy to reheat, and perfect for on the go.
¼cupshredded cheesecheddar, Swiss, or your favorite
1tablespooncornstarch
½teaspoongarlic powder
½teaspoonsalt

½cupcooked diced ham
Instructions
Preheat your oven to 300°F. Lightly coat a 12-cup muffin tin with nonstick spray to prevent sticking.
Bring a medium pot of water to a boil while the oven preheats.
In a high-speed blender, add the eggs, cottage cheese, shredded cheese, cornstarch, garlic powder, salt, and black pepper. Blend until the mixture looks smooth and creamy.
Divide diced ham evenly among the muffin cups.
Pour the blended eggs over the ham, filling each cup almost to the top. If any pieces float, gently stir each cup with a toothpick or butter knife so everything is evenly mixed.
Carefully pour the boiling water into a 9x13-inch baking dish and place it on the bottom rack of your oven. This steam helps keep the egg bites light and tender.
Place the muffin tin on the middle rack and bake for about 25-30 minutes, or until the tops look set and no longer wet in the center.
Let the egg bites rest in the pan for a few minutes before removing. They’ll lift out more easily once slightly cooled.
Notes
Make sure to blend well so your batter turns silky smooth and bakes up soft and custardy.
Use steam to your advantage because the hot water keeps the texture tender and prevents cracks.
Store in an airtight container for up to 5 days. To reheat, microwave 30–45 seconds until warmed through.
