These hot chocolate marshmallow cookies are the ultimate winter treat, combining rich, fudgy chocolate with gooey toasted marshmallow. Perfect for the holiday season or a cozy night in, they’re a fun twist on your favorite cup of hot cocoa!
Preheat the oven to 350°F and line a large cookie sheet with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and brown sugar together on high speed until light and fluffy (about 2 minutes). Add the egg and vanilla and mix until combined.
In a separate bowl, whisk together the flour, cocoa powder, espresso powder, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
Scoop the dough into 2 to 3 tablespoon portions, roll into balls, and place about 2 inches apart on the prepared baking sheet.
