8 oz cream cheese softened ½ cup mayonnaise 2 cups sharp cheddar cheese freshly shredded (about 8 oz) 1 jar (4 oz) diced pimentos drained well 1 to 2 fresh jalapeños finely diced, ribs and seeds to taste ½ teaspoon hot sauce ¼ teaspoon garlic powder ¼ teaspoon onion powder Freshly ground black pepper to taste Kosher salt to taste
Mix softened cream cheese and mayonnaise in a bowl until smooth.
Fold in shredded cheddar, pimentos, jalapeños, hot sauce, garlic powder, onion powder, salt, and black pepper.
Taste and adjust seasonings as desired.
Cover and chill for 30 to 60 minutes, then stir and serve.
I highly recommend shredding your own cheese vs. using pre shredded cheese for the smoothest texture and better flavor.
If using pickled jalapenos, start with ¼ to ⅓ cup chopped, plus 1 to 2 teaspoons brine to taste.
Swap half the mayo for plain Greek yogurt for more protein and a light tang.
Storage: Refrigerate in an airtight container for 4 to 5 days and stir before serving.
Freezing is not recommended because the dairy can separate.
For parties and tailgates, keep it chilled and limit room-temperature time to under two hours total.
