Ingredients
  

  • Nonstick cooking spray
  • 1 package Jiffy Cornbread Mix
  • 1 tbsp sugar
  • cup milk
  • 1 large egg
  • 1 tablespoon vegetable oil

Instructions
 

  • Preheat the waffle maker and lightly grease it with non-stick spray.
  • In a large bowl, whisk together the Jiffy Cornbread Mix, sugar, milk, egg, vegetable oil until just combined.
  • Pour about ¼ cup of cornbread batter into the mini waffle iron and cook on medium heat for 3-4 minutes, or until the waffles are golden brown and crisp.
  • Place cooked waffles on a wire rack over a baking sheet in a 200°F oven while you cook the remaining batter.
  • Serve immediately with your favorite toppings!

Notes

This recipe uses a mini waffle iron, but you can use a Belgian waffle maker, adjusting the batter amount as needed since servings will vary.
