These maple bourbon glazed carrots roast up tender with a sweet, herby glaze that tastes right at home on any Southern table. They’re an easy, flavorful side that works for weeknights, holidays, or any cozy fall dinner.
2lbscarrotspeeled, quartered and cut into 3 inch pieces
2tablespoonmelted butter
2tablespoonolive oil
¼cupmaple syrup
2tablespoonbourbon
4clovesgarlicminced
1 ½teaspoonfresh thyme
salt and pepperto taste
Instructions
Preheat your oven to 400°F and line a sheet pan with parchment paper or aluminum foil.
In a large mixing bowl, whisk together the butter, olive oil, maple syrup, bourbon, garlic, thyme, salt, and pepper until the glaze is well combined.
Add the carrots to the bowl and toss gently until every piece is coated.
Spread the carrots onto the prepared sheet pan in a single layer, then roast for 25 to 30 minutes, stirring halfway through, until they are tender and caramelized.
Remove the carrots from the oven and transfer them to a serving dish while they’re still warm.
Notes
If you’re using whole carrots, try to cut them into similar sized pieces so they roast evenly and get that pretty caramelized edge.
Store leftover carrots in an airtight container for up to four days, and reheat them gently on the stovetop or in the oven so the texture stays tender.
If the glaze feels too thick after reheating, add a small splash of broth or water to bring back the glossy finish.
