Ingredients

  • 1 lb fresh strawberries hulled and halved
  • 1 tablespoon maple syrup
  • ½ tablespoon balsamic vinegar
  • pinch of salt

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper for easy cleanup.
  • In a medium bowl, toss strawberries with maple syrup, balsamic, and salt.
  • Spread on the pan in a single layer.
  • Roast for 20 minutes, stirring once halfway through. The strawberries should look soft, juicy, and syrupy.
  • Let cool slightly and serve warm or cold. Both ways are delicious.

Notes

  • Use ripe or slightly soft strawberries for the best flavor and syrupy texture.
  • Roast in a single layer so the strawberries caramelize instead of steam.
  • Store leftovers in the fridge for up to 5 days and enjoy cold or gently warmed.
