Ingredients
  

  • 1 baguette or crusty bread sliced into ½-inch pieces
  • 2 tablespoons extra virgin olive oil divided
  • 4 roma tomatoes diced
  • ½ cup mozzarella pearls
  • 1 tablespoon fresh basil torn or chopped
  • 1 teaspoon garlic minced
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon red pepper flakes or to taste
  • Salt and black pepper to taste
  • Optional: extra balsamic vinegar or glaze for drizzling

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Slice the bread into ½-inch pieces and brush the tops lightly with olive oil.
  • Toast the bread in the oven for 7 to 9 minutes, or until golden and crisp.
  • While the bread toasts, add the diced roma tomatoes, mozzarella pearls, basil, garlic, olive oil, balsamic vinegar, red pepper flakes, salt, and black pepper to a mixing bowl.
  • Gently stir everything together until combined.
  • Remove the toasted bread slices from the oven and let it cool slightly.
  • Spoon the tomato mixture over each piece of toasted bread.
  • Drizzle with a little extra balsamic vinegar or glaze, if desired. Serve right away.

Notes

  • Toast the bread just before serving so it stays crisp. If you're prepping ahead, let it cool completely and store in an airtight container at room temperature for up to 2 days.
  • The tomato topping can be made up to 1 day in advance and stored in the fridge. Just give it a good stir before using.
  • Wait to assemble until you're ready to eat so the bread doesn't get soggy.
  • Use any leftover topping the next day on scrambled eggs, grilled chicken, or tossed into a pasta salad.
