This easy Spicy Bruschetta Caprese comes together in just 15 minutes with juicy tomatoes, creamy mozzarella, and a touch of heat. It’s the perfect fresh and flavorful bite for summer snacking or entertaining.
1baguette or crusty breadsliced into ½-inch pieces
2tablespoonsextra virgin olive oildivided
4roma tomatoesdiced
½cupmozzarella pearls
1tablespoonfresh basiltorn or chopped
1teaspoongarlicminced
1tablespoonbalsamic vinegar
¼teaspoonred pepper flakesor to taste
Salt and black pepperto taste
Optional: extra balsamic vinegar or glaze for drizzling
Instructions
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Slice the bread into ½-inch pieces and brush the tops lightly with olive oil.
Toast the bread in the oven for 7 to 9 minutes, or until golden and crisp.
While the bread toasts, add the diced roma tomatoes, mozzarella pearls, basil, garlic, olive oil, balsamic vinegar, red pepper flakes, salt, and black pepper to a mixing bowl.
Gently stir everything together until combined.
Remove the toasted bread slices from the oven and let it cool slightly.
Spoon the tomato mixture over each piece of toasted bread.
Drizzle with a little extra balsamic vinegar or glaze, if desired. Serve right away.
Notes
Toast the bread just before serving so it stays crisp. If you're prepping ahead, let it cool completely and store in an airtight container at room temperature for up to 2 days.
The tomato topping can be made up to 1 day in advance and stored in the fridge. Just give it a good stir before using.
