Ingredients
  

  • 12 oz evaporated milk
  • ¾ tablespoon cornstarch
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon kosher salt more or less to taste
  • 8 oz pepper jack cheese freshly shredded
  • ¼ cup hot pickled jalapeños chopped

Instructions
 

  • In a medium saucepan over medium heat, whisk together the evaporated milk, cornstarch, onion powder, garlic powder, and salt until smooth.
  • Bring the mixture to a gentle simmer, stirring frequently.
  • Reduce the heat to low and gradually add the shredded pepper jack cheese, a handful at a time, stirring constantly until melted and smooth.
  • Once the queso is fully melted and creamy, stir in the chopped pickled jalapeños.
  • Taste and adjust salt or heat level as needed, then pour into a serving dish and serve warm.

Notes

  • For the smoothest texture, shred your cheese fresh instead of using pre-shredded.
  • Keep the heat low once the cheese is added so it melts evenly and doesn’t separate.
  • You can easily adjust the heat by adding more or less jalapeños to taste.
  • Store leftover queso in an airtight container in the fridge for up to 3 days. Reheat gently on low heat with a splash of milk to bring it back to a smooth, creamy texture.
