This salad supreme pasta salad is a colorful, make-ahead side dish made with tri-color pasta, crisp cucumbers, juicy tomatoes, red onion, parmesan, Italian dressing, and classic Salad Supreme seasoning.
Bring a large pot of salted water to a boil and cook the rotini according to package directions until al dente.
Drain the pasta and rinse it under cold water until cooled. Let it drain well so the pasta salad does not get watery.
While the pasta cooks, halve the cherry tomatoes, slice the mini cucumbers, and dice the red onion.
Add the cooled pasta, tomatoes, cucumbers, red onion, grated parmesan, Italian dressing, and Salad Supreme seasoning to a large mixing bowl.
Toss everything together until the pasta and vegetables are evenly coated in the dressing and seasoning.
Cover and refrigerate for at least 2 hours before serving. Stir again before serving and add a little extra dressing if needed.
Notes
Feel free to use whatever short pasta you already have in the pantry, like bowtie, penne, shells, or regular rotini.
Add extra veggies or protein, like bell peppers, olives, chickpeas, grilled chicken, pepperoni, or mozzarella pearls, to make it your own.
Start with 1 tablespoon of Salad Supreme seasoning, then add more to taste.
Save extra Italian dressing to stir in before serving because the pasta will absorb some as it sits.
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Stir before serving and add a little extra Italian dressing if needed.
