This refreshing Virgin Watermelon Mojito is the perfect summertime sip. It's light, fruity, alcohol-free, and has just the right amount of fizz. It comes together in minutes and makes two mocktails that taste like summer in a glass.
Blend the watermelon chunks until smooth, then pour it through a fine mesh strainer to remove any pulp.
In the bottom of each glass, gently muddle the mint leaves to release their flavor.
Add lime juice, about ½ cup of strained watermelon juice, and simple syrup to each serving glass.
Fill the glass with ice cubes, then top with sparkling water or club soda.
Stir gently and garnish with a fresh sprig of mint and a watermelon wedge.

You can use regular simple syrup or make your own using my Monk Fruit Simple Syrup recipe for a lower sugar version.
Use any sparkling water or club soda flavor you like or make a sweeter version by swapping it with Sprite for a fizzy Virgin Watermelon Mojito.
To serve more people, double or triple the ingredients and make a larger batch of watermelon juice ahead of time. Add mint and sparkling water just before serving.
Store any leftover watermelon juice in an airtight container in the fridge for up to 24 hours. Don’t add sparkling water or mint until just before serving to keep the flavor and fizz fresh.
