1 cup plain nonfat Greek yogurt 1 tablespoon honey 1 tablespoon Dijon mustard 2 teaspoons lemon juice ½ teaspoon salt ¼ teaspoon black pepper 4 cups cooked shredded chicken 1 medium red or green apple diced (or use half of each for variety) 1 cup red grapes halved ¼ cup red onion finely diced ½ cup pecans roughly chopped and toasted if desired Optional for serving: lettuce cups, crackers, or croissants
In a small bowl, whisk together the Greek yogurt, honey, Dijon mustard, lemon juice, salt, and pepper.
In a large mixing bowl, combine the shredded cooked chicken, diced apples, grapes, red onion, and pecans.
Pour the salad dressing over the chicken mixture and stir gently until everything is coated evenly.
Taste and adjust seasoning if needed. Serve chilled, either on lettuce cups, with crackers, or tucked into buttery croissants.
Rotisserie chicken makes this super easy, but any leftover cooked chicken will work great.
