These oven-baked cornflake chicken tenders are crispy, golden, and full of Southern-inspired flavor from Parmesan and Old Bay seasoning. They’re an easy family dinner, a great protein option, and perfect for dipping in ranch, honey mustard, barbecue sauce, or comeback sauce!
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Make the cornflake coating by adding the cornflakes, Parmesan cheese, and Old Bay seasoning to a blender or food processor, then pulse until the mixture forms small crumbs with a little texture. You can also add everything to a zip-top bag and crush it by hand with a rolling pin.
In a large bowl, season the chicken tenderloins with salt and pepper. Pour the whisked eggs over the chicken and toss until each piece is evenly coated.
Dip each chicken tender into the cornflake mixture. Press the coating onto each piece so it sticks well.
Arrange the chicken tenders on the prepared baking sheet, leaving a little space between each one so they bake evenly.
Spray the tops lightly with cooking spray. Bake for 15 to 20 minutes, or until the coating is golden and the chicken reaches 165°F.
Let the chicken rest for a few minutes before serving with your favorite dipping sauce.
Notes
Crush the cornflakes into a mix of fine crumbs and small pieces so the coating sticks well but still has plenty of crunch.
If you do not have chicken tenderloins, slice boneless skinless chicken breasts into evenly sized strips.
For an air fryer version, cook at 400°F for 8 to 10 minutes, flipping halfway through, until the chicken reaches 165°F.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 375°F for 8 to 10 minutes or in the air fryer at 350°F for 3 to 5 minutes.
Freeze cooled chicken tenders in a freezer-safe bag or container for up to 2 months.
