Breakfast Casserole with Crescent Rolls (High Protein)

Ingredients
  

  • 1 can crescent roll dough
  • 1 lb breakfast turkey sausage
  • 1 cup milk
  • ¾ cup egg whites
  • 4 large eggs
  • 1 tablespoon ranch seasoning
  • 2 teaspoons Dijon mustard
  • 1 cup shredded colby jack cheese

Instructions
 

  • Preheat the oven to 375°F and lightly grease a 9x13 baking dish or line it with parchment paper.
  • Press the crescent rolls into the bottom of the baking dish, pinching the seams together so it forms one even layer with no gaps. Bake for 5 minutes to give the base a head start.
  • Cook the sausage in a skillet over medium heat until browned and fully cooked, breaking it into crumbles as it cooks. Drain any excess grease and set aside.
  • In a large bowl, combine the milk, egg whites, whole eggs, ranch seasoning, and Dijon mustard until smooth and fully mixed.
  • Sprinkle the cooked sausage evenly over the top of the partially cooked dough, followed by half of the shredded cheese.
  • Pour the egg mixture evenly over the top, making sure it spreads into all corners. Sprinkle the remaining cheese on top.
  • Bake for 30–35 minutes, or until the center is set and no longer jiggly. The top should be lightly golden.
  • Let it rest for 5–10 minutes before slicing so it holds together and slices cleanly.

Notes

  • Don’t skip pre-baking the crescent dough, which helps the base set and prevents it from getting soggy.
  • If adding vegetables, cook them first to remove excess moisture so the casserole doesn’t turn watery.
  • A mix of egg whites and whole eggs gives the best texture, but you can adjust based on preference.
  • Storage: Store leftovers in the fridge for up to 4 days or freeze individual portions for up to 2 months. Reheat gently to avoid drying out.
