Bring the sauce to a gentle boil over medium heat. Reduce the heat to low and simmer for 15 to 20 minutes, stirring often, until the cherries soften and the sauce thickens slightly.
Carefully blend the sauce with an immersion blender until smooth, or let it cool slightly and blend it in a regular blender.
Taste the sauce and adjust with extra vinegar for tang, brown sugar for sweetness, or dry rub for more BBQ flavor.
Let the sauce cool slightly, then use it right away or transfer it to a jar and store it in the refrigerator.
Notes
This recipe makes about 2 cups of sauce and can easily be doubled if needed.
Frozen cherries may be used in place of fresh cherries, but thaw them first and include the juices for extra flavor.
If the sauce gets too thick after chilling, stir in a small splash of water, cherry cola, or apple cider vinegar to loosen it.
