Ingredients
  

For the french toast casserole

  • 8 slices brioche bread cubed
  • 1 cup milk
  • ½ cup egg whites
  • 2 large eggs
  • 2 tablespoon brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 medium peaches sliced

For the cobbler topping

  • ½ cup all purpose flour
  • ¼ cup granulated sugar
  • ¼ cup butter melted
  • ½ teaspoon cinnamon

Instructions
 

  • Grease a 9x9-inch baking dish with nonstick spray or butter.
  • Cut the brioche into cubes, then add the bread cubes to the prepared baking dish.
  • In a large bowl, whisk together the milk, egg whites, eggs, brown sugar, vanilla, cinnamon, and nutmeg until smooth.
  • Pour the custard mixture evenly over the bread, then gently press the bread down with a spoon or spatula so it can soak up the custard.
  • Arrange the peach slices in an even layer over the top of the casserole.
  • Cover and refrigerate for at least 30 minutes, or overnight if making ahead.
  • When ready to bake, preheat the oven to 350°F and let the casserole sit at room temperature while the oven preheats.
  • In a small bowl, stir together the flour, sugar, melted butter, and cinnamon until the mixture forms clumps.
  • Sprinkle the crumb topping evenly over the casserole.
  • Bake for 30 to 35 minutes, or until the top is golden and the center is set.
  • Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • Slightly stale brioche works best because it soaks up the custard without getting too soggy.
  • If using canned peaches, drain them well and pat them dry before adding.
  • If using frozen peaches, thaw completely and pat them dry before adding.
  • Add the crumble topping right before baking for the best texture.
  • If the topping starts browning too quickly, loosely cover the casserole with foil while it finishes baking.
  • Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
