This slow cooker french onion chicken brings tender chicken, sweet onions, and melty Swiss cheese together with almost no hands-on time. It’s a cozy, protein-forward dinner that’s perfect for busy nights.
Add the chicken breasts to the bottom of the slow cooker, then layer the sliced onions on top.
In a large measuring cup, whisk together the beef broth, Worcestershire sauce, Dijon mustard, and dry onion soup mix. Pour the mixture evenly over the chicken and onions.
Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours, until the chicken is tender.
During the last 10 minutes of cooking, place one slice of cheese on each chicken breast. Cover again and let it melt until soft and gooey, about 5 to 10 minutes.
Notes
If you prefer a thicker, gravy-like sauce, remove some of the liquid after cooking and warm it on the stove, whisking in a cornstarch slurry until it reaches your desired texture.
For storage, refrigerate leftovers in an airtight container for 3 to 4 days and reheat with a splash of broth to keep the chicken moist. Leftovers can also be shredded and served over rice, potatoes, or veggies for easy lunches throughout the week.
