I love a good sandwich situation, and this chicken Caprese sandwich might be one of my favorite ways to turn simple ingredients into something that feels extra special. It has juicy chicken, basil pesto, ripe tomato, fresh mozzarella, and toasted ciabatta, which basically means every bite is fresh, creamy, and savory!

Caprese flavors always feel like summer to me, especially when tomatoes are at their best and dinner needs to be easy but still worth getting excited about.   • Pesto: Store-bought pesto keeps this recipe quick and realistic, but homemade pesto works too. If your pesto is really thick, stir in a little olive oil or mayo so it spreads easily.
  • Tomato: Use ripe but firm tomatoes for the best flavor and texture. Summer tomatoes, heirloom tomatoes, beefsteak tomatoes, or thick-sliced Roma tomatoes all work well.

Step 3: Spread pesto on the cut sides of the toasted ciabatta. You can add pesto to one side or both sides depending on how much flavor you want.
