Pancake sausage muffins are my answer to busy mornings that need real food fast. You get that McGriddle flavor in a tidy bite that's sweet-meets-savory and totally portable. They keep you full, freeze well, and warm up in minutes for a grab-and-go meal that still tastes homemade.

I grew up loving McGriddles, so I set out to make that sweet-savory flavor work for busy mornings at home.

  • Protein pancake mix: I used Kodiak pancake brand, but any favorite brand works. then adjust milk at the end so the batter is scoopable but not runny.
  • Breakfast turkey sausage: I prefer turkey for the same savory flavor with less fat. Squeeze from links or use bulk, crumble as it browns, and drain before folding into the batter.
  • Shredded sharp cheddar: I use sharp so a small handful goes a long way. Pre-shredded is fine, but freshly grated melts a little smoother.
  • Pure maple syrup: A little in the batter brings that classic McGriddle vibe. Make sure to save extra for dipping!
  • Milk: I like 2% for a tender muffin, but dairy free varieties like unsweetened almond or oat milk will also work.

  • Turn up the heat with hot sausage or a pinch of cayenne so the spicy sausage vibe comes through without changing the base.

How To Make Pancake Sausage Muffins

Follow these easy steps to mix, scoop, and bake so your sausage pancake bites come out just right.

Step 1: Preheat the oven to 375°F. Spray a mini muffin pan with cooking spray.

Step 2: In a skillet over medium heat, brown 1 lb breakfast sausage, breaking it into fine crumbles. Drain excess fat and let cool slightly.

Step 3: In a bowl, whisk protein pancake mix with milk, eggs, and maple until just combined. Fold in cooled sausage and cheddar.

  • Aim for a thick, scoopable batter so the muffin stays tender. If it looks thick, add a splash of milk to thin it out.
  • Crumble the sausage finely so the mix-ins spread evenly and every bite gets a little savory goodness!
  • For the best texture, drain cooked sausage thoroughly before folding it in so the muffins bake up moist, not oily.
  • Stir just until no dry streaks remain to avoid overmixing and keep the muffins soft.
  • For the easiest release and quick cleanup, a silicone muffin pan lets the bites pop right out and rinses clean fast.

  • Reheat: From the fridge, microwave muffin for 30-45 sec. From frozen microwave for 45-60 sec.
