This air fryer McChicken recipe is crispy, protein-packed, and easy enough for a weeknight dinner. Made with ground chicken, simple spices, shredded lettuce, mayo, and brioche buns, it is a fun homemade version of the classic fast-food sandwich.

Instructions
Make the cornflake breading by adding the cornflakes, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon paprika to a food processor and pulsing until finely crushed. You can also add everything to a zip-top bag and crush it with a rolling pin. Pour the cornflake mixture into a shallow bowl and set it aside.
In a large bowl, combine the ground chicken, yellow mustard, remaining seasonings, salt, and pepper. Mix gently until everything comes together, being careful not to overwork the chicken mixture.
Divide the chicken mixture into 4 equal portions, then shape each portion into a thin patty that is slightly wider than your bun.
Press each chicken patty into the cornflake coating on both sides until evenly covered.
Preheat the air fryer to 375°F and lightly spray the air fryer basket with oil spray.
Place the patties in a single layer in the air fryer basket, then spray the tops lightly with oil.
Air fry for 10 to 12 minutes, flipping halfway through if needed, until the patties are golden brown and the internal temperature reaches 165°F.
Toast the brioche buns, then spread mayo on the bottom bun. Add the crispy chicken patty and shredded lettuce, then place the top bun on and serve right away.
Notes
Wet your hands before shaping the patties to make the ground chicken easier to handle.
Make the patties slightly larger than the buns because they will shrink as they cook.
Use a meat thermometer to make sure the patties reach 165°F.
Store cooked patties separately from the buns and toppings for the best texture. Patties can be stored for up to 4 days.
