Caramel apple rice krispie treats are an easy fall treat when I want something sweet, nostalgic, and party-ready without turning on the oven. This version nails bold apple-caramel flavor while keeping the bars soft and gooey!

When it's football season and fall festivals are on the calendar, I want bakes that travel well, slice clean, and make kids and adults happy. As a dietitian, I'm also thinking about texture and balance. Freeze-dried apples give real apple flavor without extra moisture, and a light hand with caramel sauce keeps these sweet but not over the top.

Here's what you need to make soft fall rice krispie treats with real caramel apple flavor!

  • Butter: Melts into the marshmallows for that classic gooey bite. You can also use brown butter for a toasty note if you like.
  • Mini marshmallows: They melt quickly and evenly. Keep a handful back to stir in at the end for extra pockets of goo.
  • Caramel extract: Boosts caramel flavor without having to load in a ton of sauce.
  • Rice Krispie cereal: Any crisp rice cereal works. Fresher cereal equals better texture!
  • Freeze-dried apples: Crush them right in the bag for little pops of flavor and a light texture.
  • Caramel sauce: Melt to a pourable consistency and drizzle. I like to use my apple cider caramel sauce for a cozy fall touch.

Substitutions & Variations

Swap what you've got and add a few twists to make these bars your own.

  • Cook the butter over medium-low until the specks turn golden and smell nutty for deeper, toasty flavor.
  • If you don't have caramel extract, use vanilla plus a small pinch of extra salt.
  • Swap freeze-dried apples for finely chopped dried apples that will give a slightly chewier flavor. 
  • Add ½ teaspoon cinnamon, pumpkin pie, or apple pie spice to the melted marshmallows for a spicier kick!
  • Drizzle chocolate, add a caramel zig-zag, or finish with crushed apple chips for crunch.

How To Make Fall Rice Krispie Treats

Simple steps to mix, press, drizzle, and slice without any fuss.

Step 1: Line an 8-inch square pan with a parchment sling and lightly spray the parchment.

Melted marshmallows and butter are stirred in a saucepan with a spatula.

Step 2: In a large pot over low heat, melt the butter. Add 10 ounces mini marshmallows and stir gently until just melted and smooth. Remove from heat.

Rice cereal and crushed freeze-dried apples are added to the melted marshmallow mixture.

Step 3: Stir in the caramel extract. Add the Rice Krispies cereal and the crushed freeze-dried apples. Use a lightly greased silicone spatula to fold until everything is coated.

Step 4: Scrape the marshmallow mixture into the prepared pan. Lightly press into an even layer. Don't pack it down or the bars will be firm.

  • Lightly grease the spatula or your hands so the mixture presses in easily without sticking.
  • Let the pan cool before slicing for clean squares, and wipe your knife between cuts.
  • For fast prep, crush freeze-dried apples in the bag by using your hands or a rolling pin.
  • For the best texture, avoid fresh apples and stick with freeze-dried to keep the bars from turning soggy.

Here's how to keep them soft and sliceable for lunchboxes, parties, and tailgates.

  • Storing: Apple rice krispies can be stored at room temperature in an airtight container for 2 to 3 days. If stacking, place parchment between layers.
  • Freezer: Freezing is not ideal due to the caramel drizzle. If you must, wrap tightly for up to 1 month and thaw at room temp.

Can I double this for a 9×13?

Yes! Just double the ingredients, line a 9×13 with parchment, and press lightly. Great for big groups, school events, and game day spreads.

Can I make these gluten free or dairy free?

For gluten free, use a certified GF crisp rice cereal and check labels on marshmallows and caramel. For dairy free, swap plant-based butter and verify the marshmallows and caramel are dairy free. Texture will be slightly softer but still delicious.

Can I make these ahead for a party?

Absolutely! Make up to 24 hours in advance. Keep at room temp in an airtight container with parchment between layers. Drizzle caramel just before serving if you want the tops shiny.
