I've partnered with National Cattleman's Beef Association on behalf of the Beef Checkoff to put a fun twist on a classic Italian-inspired spread. All thoughts and opinions are my own.

Beef has always played a big role in our family get-togethers, especially during the holidays. My husband's family has a tradition of serving spaghetti on Christmas Eve, which is something they've done for years. I came up with this pasta charcuterie board as a way to keep that tradition alive but add a little extra fun to it! It's something that feels more festive and special for everyone gathered around the table.

To create a truly show-stopping board, here's what I love to include!

  • Beef meatballs: Whether you make them from scratch or buy your favorite brand, these are a staple for a classic Italian dinner.
  • Steak tips: For the best flavor and tenderness, I like to use sirloin filet seasoned with garlic and Italian seasoning. 
  • Italian beef sausage: Choose high-quality beef sausage made without fillers for the best flavor. Grill or sauté in a pan until nicely browned, then slice thinly for easy serving.
  • Choice of pasta: I like offering at least 2 different pasta types such as spaghetti and penne. The spaghetti absorbs all that rich sauce, while the penne's hollow centers hold on to the delicious bits.
  • Sauces:
    • Marinara sauce: A must-have classic that everyone loves!
    • Alfredo sauce: Creamy and indulgent for those who want something richer.
    • Pesto: Fresh basil, garlic, and olive oil blended into a bright, vibrant sauce.
  • Toppings & garnishes: Add fresh herbs like basil and parsley, a sprinkle of red pepper flakes, sun-dried tomatoes, and freshly cracked black pepper. Enhance the board further with artichoke hearts, capers, olives, and other flavorful additions.

  • Sausage alfredo penne: Combine penne with the Italian beef sausage and a generous pour of alfredo sauce-finish with a dash of red pepper flakes for a little kick.
  • Pesto veggie pasta: Mix spaghetti with pesto, artichoke hearts, capers, and olives for a light, fresh option.
  • Loaded garlic bread: Use the garlic toast as a base, then top with meatballs, marinara, and melted cheese for a quick, cheesy bite.

How to Assemble Your Pasta Charcuterie Board

  1. Cook pasta: Prepare your pasta according to package instructions. Once drained, drizzle with olive oil to prevent sticking.
  2. Beef and meats: Sear steak tips, grill sausages, and prepare meatballs until fully cooked. Whole cuts should be cooked to an internal temperature of 145 F for medium-rare and Ground Beef should be cooked to an internal temperature of 165 F, as measured by a meat thermometer. 
  3. Sauces: Warm up your marinara, alfredo, and pesto sauces and place them in ceramic bowls.

For the Meats:

  • 1 lb Beef Meatballs cooked (homemade or store-bought)
