If you need something fresh you can make once and eat all week, this pesto orzo salad is it. It's bright, easy, and one of those recipes that somehow works for everything, from quick lunches to last-minute get-togethers.

Around here, once the weather warms up, I'm always looking for something I can keep in the fridge and pull from without thinking too hard. This is that recipe! It comes together fast, uses mostly pantry and fridge staples, and actually holds up without getting dry or boring after a day or two.

As a Southern RD, I also love that it's not just a "side that looks pretty."
