Flour is my pick because they're flexible, crisp nicely, and flip clean. Corn can work if they're thicker and very well warmed first. If you skip that step, corn tends to rip when you spread the meat or go in for the flip.

You can if you're looking for a less oil method! In an air fryer set to 400°F, arrange tacos meat-side up on a tray and cook until the chicken is browned and at 165°F, then flip to crisp the tortilla for 1 to 2 minutes.

I like to build to order and add lettuce and tomato right before serving, blot tomatoes with a paper towel, and drizzle sauces at the table. You can also hold finished tacos on a rack set over a sheet pan in a 200°F oven for up to 10 minutes.
