If you need a low-effort dinner that tastes like it belongs at a Southern summer cookout, this pulled pork with Coke is such a good one to keep in your back pocket. The pork shoulder cooks low and slow with Coke and BBQ dry rub for sweet, smoky, shreddable BBQ flavor.

Shredded pulled pork is served in a metal pan with buns and Coke nearby.

I always order pulled pork when we go to BBQ spots, so this recipe feels like my at-home shortcut to that same sweet, smoky flavor. It's not trying to replace the smokehouse, but it absolutely hits the spot when a BBQ craving shows up.

As a Southern dietitian and busy mom, I love a protein-packed meal that still feels comforting and realistic. Pulled pork is SO versatile, which makes it a lifesaver for busy weeks and summer hosting. You can turn it into sandwiches, nachos, loaded baked potatoes, rice bowls, or a full BBQ plate! Pair it with colorful sides like slaw, corn, baked beans, or a simple summer salad to round out the meal without making things complicated.

If you're planning a summer BBQ spread, try this tossed in my smoky peach BBQ sauce or cherry cola bbq sauce!

  • Simple ingredients: You only need pork shoulder, Coke, and BBQ dry rub to create a flavorful pulled pork base that tastes like you did way more work than you actually did.
  • Make-ahead friendly: This crockpot pulled pork reheats well, so you can make it before a party and keep hosting day a whole lot easier.

Ingredients for Cola Pulled Pork Recipe

This pulled pork with Coke uses simple ingredients, but each one helps build that sweet, smoky BBQ flavor.

Pork shoulder, BBQ dry rub, and Coca-Cola are arranged for pulled pork with Coke.
  • Pork shoulder: Pork shoulder, also called pork butt, is the best cut for pulled pork because it has enough fat to stay juicy and become tender after slow cooking.
  • Coke: Regular Coca-Cola adds moisture, sweetness, and a little acidity while the pork cooks low and slow.
  • BBQ dry rub seasoning: A smoky BBQ dry rub seasons the pork before cooking and gives the meat way more flavor than Coke alone. I always keep my homemade rub on hand but use your favorite kind!
  • BBQ sauce: BBQ sauce is optional, but it is delicious stirred in after shredding if you like saucier pulled pork. Try my cherry bbq sauce or apple bbq sauce for fun homemade versions!

Substitutions & Variations

You can keep this recipe classic or change it up depending on what you have, what you like, and how you plan to serve it.

  • Use pork tenderloin if you want a leaner option, but reduce the cook time and watch it closely so it does not dry out.
  • Try Dr Pepper pulled pork if you want a slightly different sweet flavor that still works really well with smoky BBQ seasoning.
  • Use root beer to make a sweeter, almost caramel-like flavor that pairs nicely with a savory dry rub.
  • Add cayenne pepper, crushed red pepper flakes, hot sauce, or spicy BBQ sauce if you want spicy pulled pork with more heat.

How to Make Coca Cola Pulled Pork

This recipe is mostly hands-off, which makes it perfect for busy days, summer hosting, or anytime you want dinner working while you do literally anything else.

Raw pork shoulder is coated with BBQ dry rub seasoning in a metal pan.

Step 1: Pat the pork shoulder dry with paper towels, then coat it on all sides with BBQ dry rub seasoning.

Coke is poured around seasoned pork shoulder in a slow cooker.

Step 2: Place the seasoned pork shoulder in the crockpot and pour the Coke around the meat instead of directly over the top.

Cooked pork shoulder sits in a slow cooker with Coke cooking liquid.

Step 3: Cover and cook on low for about 8 hours, or until the pork is very tender and shreds easily with two forks.

Pulled pork is shredded with two forks in a slow cooker.

Step 4: Carefully transfer the pork to a cutting board or large bowl, then remove any large pieces of fat. Shred the pork with two forks.

Step 5:  Discard most of the cooking liquid from the slow cooker and add the shredded pork back to the slow cooker. Stir in BBQ sauce, if using.

Step 6: Keep warm until ready to serve, then enjoy on sandwiches, loaded baked potatoes, nachos, rice bowls, or BBQ plates.

Tips for Best Slow Cooker Pulled Pork

A few simple tips help keep this pulled pork tender, flavorful, and easy to serve.

  • Use regular Coke for the best flavor because Diet Coke or Coke Zero will not add the same sweetness to the pork.
  • Cook pulled pork on low so the pork shoulder has enough time to become tender, juicy, and easy to shred.
  • Let the pork cook until fork-tender (aka shreds easily). Trust the process and keep cooking if the meat still feels tough!
  • Drain excess cooking liquid before adding BBQ sauce so the shredded pork does not taste watery.
  • Broil crispy pulled pork for a few minutes after shredding if you like browned edges and a little extra texture.

What to Serve with Coke Pulled Pork

This Coke pulled pork works for everything from sandwich night to a full Southern summer spread.

  • Pile the pork onto soft buns with slaw and pickles for easy pulled pork sandwiches.
  • Add the pork, cheese, green onions, and BBQ sauce to make loaded BBQ baked potatoes.
  • Layer chips, cheese, jalapeños, and slaw with pork for Southern pulled pork nachos.
  • BBQ Pulled Pork Bowl!
  • Serve the pork over sweet potato fries, ranch slaw, and pickled onions for simple BBQ bowls.
  • Use Hawaiian rolls or slider buns to make party-friendly pulled pork sliders.
  • Pair the pork with baked beans, potato salad, cornbread, and pasta salad for classic Southern sides.
  • Tuck leftovers into tortillas with pineapple slaw and pickled onions for quick pulled pork tacos.

Storage

This pulled pork with Coke stores really well, so it is a great recipe to make ahead for summer parties, meal prep, or busy weeknights.

  • Refrigerator: Store leftover pulled pork in an airtight container in the refrigerator for up to 4 days.
  • Freezer: Freeze cooled pulled pork in a freezer-safe bag or container for up to 3 months.
  • Reheating: Reheat pulled pork in the microwave, on the stovetop, or in the slow cooker with a splash of broth, Coke, or BBQ sauce to keep it moist.
  • Make ahead: Cook and shred the pork 1 to 2 days in advance, then reheat it in the slow cooker before serving.
  • Party serving: Keep pulled pork on the warm setting in the slow cooker during a party, and stir occasionally so it stays moist.

FAQ

Can you taste the Coke in pulled pork?

Not really. Coke adds sweetness and moisture, but the finished pulled pork tastes more like BBQ pork than soda.

Can I use Diet Coke or Coke Zero for pulled pork?

You can use Diet Coke or Coke Zero if needed, but regular Coke gives the best flavor because it adds real sweetness that works well with the pork and BBQ seasoning.

Why is my pulled pork tough?

Pulled pork usually turns out tough when it has not cooked long enough. Pork shoulder needs time for the fat and connective tissue to break down, so keep cooking until it shreds easily with two forks.

Should pulled pork cook on low or high?

Low is best for pulled pork because it gives the pork shoulder time to become tender and juicy. You can cook it on high if needed, but low gives the best texture.

How much pulled pork per person?

For parties and cookouts, plan on about ⅓ to ½ pound of cooked pulled pork per person, depending on how many sides you are serving. If you have a lot of sides, slider buns, or appetizers, you can usually plan closer to ⅓ pound per person.
